HONEY ROASTED SWEET POTATOES WITH HONEY CINNAMON DIP
2-3 sweet potatoes
3/4 tablespoon HONEY
3/4 tablespoon olive oil
1 tablespoon cinnamon
salt and pepper to taste
optional spices: pumpkin pie spice, nutmeg, ginger, allspice
Preheat oven to 350 deg F. Spray baking sheet with cooking spray. Slice potatoes into 1 inch chunks and place in gallon ziplock bag. In bag, add HONEY, oil, cinnamon, salt, pepper, and seasonings. Shake and turn bag to evenly distribute marinade. Transfer potatoes to baking tray, single layer, not touching if possible. Keep excess marinate for basting halfway through baking. Bake for 20 minutes, remove from oven, flip potatoes over and drizzle on remaining marinade. Return to oven and bake 20 minutes or until tender. While potatoes are baking, make the dip.
1/3 cup Greek yogurt
2/3 tablespoons HONEY
1 teaspoon cinnamon
Add all ingredients to a small bowl and whisk until smooth. Serve with HONEY Roasted Sweet Potatoes.
